Danish Crepes

  • 4 eggs, separated
  • 2 T. sugar
  • 2 t. salt
  • 1 qt. milk
  • 3 c. sifted flour
  • vanilla
     
 
Beat egg whites very stiff. Set aside. Put yolks, sugar and salt in bowl and blend. Alternate milk and flour until gone, mixing well. Add vanilla to taste (if you think you've added too much, add a bit more). Fold in egg whites. Cook in large frying pan with a little oil or margarine already melted in it. Brown both sides. Enjoy! Tastes great with fruit preserves, or syrup, or lemon juice, butter and powdered sugar! Be creative!
