Karen's Stewed Pepper Steak

  • About 2 lbs. top round steak 1/2 inch thick
  • 4 T. oil, divided
  • salt and pepper to taste
  • 1 large onion, sliced and separated into rings
  • 1 large green bell pepper, seeded and sliced into rings
  • 1 can stewed tomatoes
  • 1/2 c. brown sugar
  • 1/4 c. soy sauce
  • 2 T. Worcestershire sauce

Cut steak into serving size pieces, tenderize with mallet, dip in cold water and then dredge in flour. Salt and pepper. Add 2 tablespoons of the oil to a skillet and brown steak well on each side, turning once. In a saucepan add the remaining 2 tablespoons oil and the onions and peppers. Cover and steam for a few minutes , then uncover and add stewed tomatoes, brown sugar, soy sauce and Worcestershire sauce. Bring mixture to boil, turn down and let simmer for 5-10 minutes. When mixed and heated thoroughly, pour over browned steak in skillet. Cover and simmer on low about 1 1/2 hours or until very tender. Serve with rice or mashed potatoes. (A large electric skillet is very good for making this).
