By: Margie Gantz

  • 3 c. sugar
  • 4 eggs
  • 1 tsp. cinnamon
  • 1 1/2 tsp. salt
  • 1 c. veg. oil
  • 1 c. pumpkin
  • 2/3 c. water
  • 2 tsp. baking soda
  • 3 c. flour

Preheat oven to 350. Grease and flour three metal coffee cans. Fill each can equally about 2/3 full. Bake for 1 hour at 350. Remove bread (may need to tap sides of can and bottom in order to get bread to release) from cans immediately and cool on a coolong rack. While cooling roll each loaf from time to time to prevent loaf from becoming flat on any one side. Serve with cool whip or icecream
