Arizona Sunshine Pie

- 1 lg. lemon
- 4 beaten eggs
- 1 stick melted butter
- 1 tsp. vanilla
- 1 1/2 c. sugar
- 1 unbaked pie crust
- whipped cream
Leave rind on lemon, remove seeds & cut lemon into small pieces. In a blender or food processor, blend everything together until smooth & creamy. Pour into pie crust. Bake 350 for 40 min. or until firm in the middle, cool & serve with whipped cream. |
