Garlic Basil Chicken Tenders
By: Laurie Hardy - 3 Boneless Chicken Breasts
- 3 Eggs
- 1 c. Water
- 3 Cloves Garlic, minced
- 1/3 c. Fresh Basil, chopped
- 1/3 c. Shredded Romano Cheese
- 1/4 tsp. Salt
- 1/4 tsp. Pepper
- Italian Bread Crumbs
- Extra Virgin Olive Oil for frying
Thinly slice chicken breasts, removing any fat. In a large bowl whisk eggs, water, garlic, basil, cheese, salt and pepper. Add chicken and stir. Cover and refrigerate. Let marinate overnight. Bread each piece of chicken in bread crumbs. Fry several pieces at a time over medium heat until chicken is golden brown on one side, flip and fry other side till golden brown. Remove with tongs and place on paper towel lined plate. Repeat till chicken in bowl is gone. Change oil in frying pan if necessary. |
