Description: The recipes in this book are all geared toward those individuals that are weight-conscious and still want food that tastes great. You will see recipes for many comfort foods made low-fat such as rice pudding, baked potato soups, pasta fagioli soups, tomato and butternut squash soups, and more soups. There are lots of vegetable recipes, appetizers, and several main dishes as well such as hearty beef stew, etc. Cookies, popcorn, and a fudge recipe are also in the book along with pancakes, sandwiches, and oatmeal recipes.

Hearty Beef Stew-a Real Winner!!
By: Jennifer - 1.5 lbs lean stewing beef, cut into 1 inch chunks
- 1/2 lb chopped carrots (2-3)
- 1/2 lb chopped parsnips (2-3)
- 1 pound chopped red potatoes, with skins
- 3 chopped celery ribs
- 1 medium onion, diced
- 2 tbsp Worcesthershire sauce
- 1 tbsp vegetable oil
- 1 packet Swanson's Beef Flavor Boost
- 2 cups water
- 3 cloves garlic, 2 peeled whole cloves and 1 finely diced clove
- 2 tsp salt
- 1 tsp sugar
- 1/2 tsp pepper
- 1 tsp smoked paprika
- 1/4 tsp ground allspice
- 2 tbsp cornstarch
- 2 cups fat-free beef broth
Heat vegetable oil in a large soup pot or Dutch oven over medium-high heat. Add beef and brown on all sides. Add in water, flavor boost packet, onions, garlic, smoked paprika, Worcestershire sauce, allspice, salt, pepper, and sugar. Cover and simmer for 90 minutes. Add potatoes, carrots, parsnips, and celery to pot, as well as any additional beef broth, you are using. Cook for an additional 45-60 minutes or until the beef is tender and shreds easily. Cooking time may vary depending on the size and cut of your meat. Mix the cornstarch with a smallamount of cold water and stir together. Pour into the stew and bring to a boil. Immediately turn off the heat and let rest before serving. Makes 8 one cup sized servings. Weight Watchers Points Plus Values totals 5. |
