Favorite Recipe

Pennsylvania Dutch Potato Filling

  • 5 lb. potatoes
  • 1 bag of white bread cubes (crumbled)
  • 1 c. chopped onion
  • 2 c. chopped celery
  • ½ c. butter
  • 4 eggs
  • 1 – 2 c. chicken broth
  • 1 c. milk
  • 1 T. parsley
  • Salt and pepper (to taste)

1. Peel and cut potatoes into chunks. Boil until tender (20–25 mins.). Meanwhile, sauté celery and onions in ¼ c. butter until soft. Drain potatoes and mash with milk and ¼ c. butter. 2. Beat eggs and add to potatoes; mix well. Stir in bread and sautéed mixture. Add parsley, salt and pepper. Slowly add chicken broth until mixture is soft and has a moist consistency. 3. Bake in lg. casserole dish at 325 degrees for 35–45 minutes until brown around edges.
