Carrot Cake

- 2 c. flour
- 2 tsp. baking powder
- 1-1/2 tsp. soda
- 1 tsp. salt
- 2 tsp. cinnamon
- 2 c. sugar
- 1-1/2 c. salad oil
- 4 eggs
- 2 c. grated carrots
- 1 c. crushed drained pineapple
- 1 c. chopped pecans
- 1 c. coconut
- Pinch of nutmeg (Dee's secret ingredient)
Grease and flour a bundt pan. Mix the flour, baking powder, soda, salt, cinnamon, sugar & pinch of nutmeg. Blend in salad oil and eggs. Add remaining ingredients. Bake 45 minutes at 350 deg. Use Dee's Cream Cheese Frosting. |
