Italian Beef
By: Reba (Mccreary) Byrom - 3 lbs. boneless beef round rump roast
- 1 (14 oz.) can beef broth
- 1/2 c. water
- 6 cloves garlic, minced
- 2 tsp. crushed dried oregano
- 1/2 tsp. crushed red pepper (or more to taste)
- 1/4 tsp. black pepper
- 3 green sweet peppers, seeded & cut into strips
- 8 hoagie buns, split
Place roast, broth and water in crockpot and cook for 5 hours. Shred meat in a bowl. In a saucepan combine juices from crockpot, garlic, oregano, red pepper and black pepper. Bring to a boil and reduce heat. Add shredded meat and pepper strips. Simmer, uncovered, 5 to 10 minutes until peppers are tender. Remove from heat but keep warm. Warm buns in 350° oven for 5 to 10 minutes. Spoon beef, peppers and juices onto buns. Serve with remaining juices for dipping, if desired. |
