Point Reyes Original Blue Cheese-balsamic Asparagus

- 1 T. olive oil
- 2 shallots, sliced thinly
- 2 tsp. black peppercorns
- 1 bay leaf
- 3 c. balsamic vinegar
- 4 oz. Original Blue cheese
- 3 T. butter, diced
- For garnish, additional Original Blue Cheese, crumbled
Grill or gently boil asparagus until soft. While the asparagus cooks, saute shallots and peppercorns in olive oil until shallots are soft. Add bay leaf and vinegar and cook until sauce is reduced to 1/4 cup. Whisk in the blue cheese and butter. Strain the sauce and serve warm with asparagus. Garnish with crumbled Original Blue Cheese. |
