We are a part of a vast network of concerned Christain women involved in ministries centered expecially around women and youth. The organized unit of United Methodist Women shall be a community of women whoses purpose is to know God and to experience freedom as a whole person through Jesus Christ; to develope a creative, supportive fellowship; and to expand concepts of mission through participation in the global ministries of the church.

Mj's Chicken Pot Pie

  • Pie Crusts
  • 1/4 c. butter
  • 1 med. onion, chopped
  • 1/2 c. fresh mushrooms, sliced
  • 1/3 c. flour
  • 1/2 tsp. salt
  • 1/2 tsp. poultry seasoning
  • 1/8 tsp. pepper
  • 2 c. chicken stock
  • 3/4 c. milk
  • 3 c. cooked chicken, chopped
  • Can mixed vegetables, drained
  • 4 oz. diced pimento
  • 2 tsp. parsley

Preheat the oven to 450*. This recipe will make 6 small individual pot pies. Cut the tops from your favorite scratch pie crust recipe or buy the ready made ones. Be sure to cut a vent to let the steam escape. Melt butter and saute the onion and mushroom until tender.add flour,salt,poultry seasoning, and pepper. Add stock and milk all at once. Cook until thickened and bubbly. Add chicken, vegetables, pimento and parsley. Cook until heated through. Divide between the pie pans and cover with tops, sealing the edges. Bake at 450* for about 15 minutes. May be frozen. Note: This was one of my Mother's special dishes and she often made it for the Humw bake sale. I remember years ago a good friend calling and offering a bribe if I'd sneak a half dozen of the pies out of Mom's freezer before she took them to the church. Enjoy!
