Black Bottom Cupcakes

- Cake:
- 1 1/2 c. flour
- 1 c. sugar
- 1/4 c. cocoa, heaping
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 c. water
- 1/3 c. oil
- 1 tsp. vinegar
- 1 tsp. vanilla
- Filling:
- 1 (8 oz) cream cheese
- 1 egg
- 1/3 c. sugar
- 1/8 tsp. salt
- 1c. chocolate chips
- Sugar to sprinkle
In a mixing bowl combine flour, sugar, cocoa, baking soda and salt. Add water, oil, vinegar and vanilla and mix well. Line 18 muffin cups with paper or foil liners. Divide batter equally among cups. In a small mixing bowl beat cream cheese, egg sugar and salt. Stir in chocolate chips. Spoon filling on top of chocolate batter. Sprinkle with sugar and bake at 350 for 20 to 25 minutes. |
