Special Features: I started writing my cookbook for my son, Del. I wanted to add as much detail as possible for each recipe. I have written my recipes in bullet form for easy-to-follow instructions. I also list the type of pan you will need. My cookbook is for the beginner cook, as well as the experienced cook!

Description: Kathy's Kitchen is a great southern cookbook for everyone. The recipes included are from my family and friends in Mississippi, and others. I tweaked and mastered each recipe to "my perfection", from creamed potatoes and chicken and dressing to carrot cake and pecan pie!

• 1- 10 oz bag Jet-Puffed marshmallows
• Ritz crackers
• Parchment paper
• Cookie sheet

Line cookie sheet with parchment paper. Place Ritz crackers on cookie sheet. Put one marshmallow on each cracker. Turn oven to broil setting. Move the rack in the oven to the 4th slot. Watch marshmallows as they cook. They will brown and burn quickly! Cook marshmallows until lightly brown. This will only take a few minutes. Remove from oven and place a Ritz cracker on each marshmallow and mash the marshmallows down. I never have any left, but if you do keep in airtight container.
