Pork Medallions with Apricot Orange Sauce

  • 3 T. olive oil, divided
  • 1 lb. pork tenderloin, cut into 1" thick slices
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 1 c. onion, thinly sliced
  • 1/2 c. dried apricots
  • 1/2 c. fat-free, low-sodium chicken broth
  • 2 T. fresh orange juice
  • 2 tsp. minced garlic
  • 1/8 tsp. black pepper
  • 1 T. fresh, flat leaf parsley
  • 1 tsp. oregano

Heat 2 tablespoons oil in large non-stick skillet over medium heat. Sprinkle pork evenly with salt and 1/4 teaspoon pepper. Add pork to pan; cook 3 minutes on each side or until browned. Remove from pan, keep warm. Heat remaining 1 teaspoon oil in pan. Add onion and saute for 3 minutes or until tender. Stir in apricots, broth, juice, garlic and 1/8 teaspoon pepper; bring to a boil. Cook 2 minutes or until slightly thickened. Remove from heat; stir in parsley and oregano. Serve sauce with pork. **Boneless pork chops may be substituted for the pork tenderloin.
