Lititz House B&b Caramel Apple Breakfast Pudding

  • 2 lg. apples, peeled and sliced
  • 3/4 tsp. cinnamon
  • 1/2 c. brown sugar
  • 2 T. light corn syrup
  • 2 T. butter
  • 1/4 c. pecan pieces
  • 3 eggs, beaten
  • 1 1/4 c. milk
  • 1 tsp. vanilla extract
  • 1/4 tsp. nutmeg
  • 8-10 slices Italian bread (or raisin bread trimmed of crust)

Cook apples in 1/4 cup water. Drain in colander and m ix with cinnamon. Set aside. In saucepan, heat brown sugar, corn syrup, and butter to a boil and pour mixture into a square baking dish. Sprinkle with pecans. Arrange a layer of break on top of caramel mixture. In mixing bowl, combine eggs, milk, vanilla, and nutmeg. Spoon apples on bread layer. Arrange remainingbread slices over apples. Pour egg mixture over bread, pressing gently. Cover with wrap and refrigerate 3-24 hours. Bake uncovered at 325 degrees for 45 minutes. Let stand 15 minutes. Run knife around edges, then carefully invert onto plate. Cut into triangles and sprinkle lightly with powdered sugar when placed on plate.
