Black Walnut Cake with Creme Cheese Icing

  • 1-1/2 c. plain flour
  • 1 stick softened butter
  • 1 tsp. vanilla
  • 1 c. milk
  • 1/2 tsp. baking powder
  • 1 c. sugar
  • 3 eggs
  • 1 c. finely chopped black walnuts
  • Cream Cheese Icing:
  • 3 oz. cream cheese softened
  • 1 tsp. vanilla
  • 1/2 c. finely chopped black walnuts
  • 1 T. milk
  • 2-1/2 c. confectioner's sugar

Put ingredients for cake in large mixing bowl in the following order: sugar, flour, baking powder, butter, eggs, milk, vanilla and nuts. Turn mixer on low and mix for 1 minute. Scrape sides of bowl and turn mixer on medium high and mix 4 minutes. Pour batter into a greased and floured tube pan and bake at 375° for 1 hour until cake tests done. While cake is baking blend together cream cheese, milk, and vanilla. Gradualy add sugar and beat until frosting is smooth and will spread easily. Stir in walnuts. Add more milk if icing is too thick.
