Hunter-style Chicken Cacciatore

  • 6 Split Chicken Breasts (Use Boneless if you prefer)
  • 2 – 28 oz Cans of Chopped Tomatoes
  • 2 cans of mushrooms
  • ½ - 1 bottle of Capers, drained and rinsed
  • ¼ Cup of Chicken Broth
  • ½ Cup of Your Favorite Red Wine
  • 3 Cloves of Chopped Garlic
  • ¼ Cup of Grated Parmesan
  • Olive Oil

In a large skillet on medium heat, brown the chopped Garlic in 2 Tablespoons of olive oil until lightly browned - do not over cook. Add the chicken Breasts to the skillet and lightly brown all over. remove the chicken breasts and gently scrape the bottom of the skillet. Add the chopped tomatoes, wine, Mushrooms and capers, stir then bring to a simmer. Place the chicken breasts back into the skillet and cook on medium heat until cooked thoroughly, about 30-40 minutes. Serve the Chicken and sauce on top of your favorite pasta, sprinkle with Pepper and grated Cheese. Makes 6 servings. .
