It contains 356 recipes from members and friends, from celebrations shared over the years. It is a non-traditional cookbook that reflects the lifestyle of our members. There are eight unique section titles: At Home and Abroad, Who Says Men Can't Cook?, and Summer in Coronado, among them. the original artwork that graces the cover and section dividers was produced by two of our talented members. They elevate this cookbook to coffee table status. The Crown Garden Club hopes you will enjoy the tempting recipes we have collected.

Favorite Recipe
Lemon Swordfish with Avocado Butter
By: Tony Ralphs, husband of Pilar Ralphs - Marinade:
- 1/3 c soy sauce
- 2 tsp dijon mustard
- 1/3 c lemon juice
- 1/2 c olive oil
- 1 garlic clove, crushed
- 8 swordfish steaks

- Avocado Butter:
- 1/2 c butter, softened
- 1 c ripe, mashed avocado
- 5 tsp fresh lemon juice
- 1/2 c chopped fresh cilantro
- 1 clove garlic, crushed
- Lemon wedges and chopped cilantro for garnish
Whisk together all marinade ingredients, Place swordfish steaks in a shallow dish and pour marinade over. Marinate about 1 hour. Remove from marinade and grill over coals or under broiler for 5-6 minutes per side. Serve fish garnished with lemon, chopped cilantro and top with dollops of avocado butter. (For avocado butter, whip butter in small mixing bowl until fluffy. Beat in remaining avocado butter ingredients.) Serves 8. Note: This is a wonderful summer entree. |
