Mom's Oyster Stew Recipe
By: Maxine Mckoy - 2-3 pts (standard/select) Oysters
- 1-bunch green onions
- 1-lg yellow onion
- 2-stalks celery
- 1-1/2 stick butter
- 1-quart half& half
- 1-pt heavy cream
- 1-2 tbps flour
- 1/4 tsp salt
- 1/4 tsp pepper
- 1/4 tsp sage
- 1/4 tsp nutmeg
Chop the green and yellow onions/celery and saute in 1/2 stick of butter and set aside. In a separate pot drain the oysters use the another half of butter to cook oysters until they begin to curl around the edges. Melt the remainder of the butter, mix the flour to make a roue, pour half/half stir mixture until it begins to thicken, pour in heavy cream. Use a spoon with frainage to transfer oysters to the thicken mixture. Add a cup of juice from the cooked oysters, add seasonings to taste. You have a delicious delicacy. |
