Cinnamon Roll Ups
By: Emily Martin, Little Rock, Ar

  • 24 or more slices white bread (crust removed)
  • 1/2 cup butter (softened)
  • 8 oz. cream cheese (softened)
  • 1 egg yolk
  • 1/4 cup sugar
  • More butter, sugar and cinnamon for rolling ( I use a lot of each for rolling)

Cream butter, cream cheese, egg yolk and sugar until light and fluffy. Flatten each piece of bread with your hand and spread creamed mixture on bread. Roll bread into a log. Mix cinnamon and sugar in bowl. Melt butter in another bowl. First dip the log in butter, then in sugar and cinnamon mixture. (I am very liberal with both butter and sugar mixture.) Place roll seam side down on a cookie sheet. Cover with foil and freeze. Do not thaw before baking. Bake uncovered for 15 minutes at 400 degrees. Great to make ahead and heat up as many as you need.
