Special Features: Our "Treasured Recipes" Cookbook has plenty of history about Lubbock Christian University and the the Associates of Lubbock Christian University. It has many highlights from past luncheons with menus and recipes. It features symbols marking Heart Healthy, Quick and Easy, Diabetic and "In Memory." And there are lots of Pies! 101 recipes in fact! The Associates have sold pies at the Lubbock Panhandle South Plains fair as a fundraiser for years.

Description: The 50th Anniversary Edition of "Treasured Recipes," is a culmination of many efforts. It is the third cookbook to be compiled by the Associates of Lubbock Christian University. Recipes have been included from Associate members, wives of university trustees and former presidents, faculty members and wives, staff and administrators and other friends of the university. We have chosen to showcase our beloved historic home, the Arnett House, beginning with the cover using a photograph of one of the antique glass doorknobs and continuing throughout the book. Enjoy taking a peek inside our house and learning about some of the treasures it contains.

Funds raised support: In 1958 the Associates was started to assit Lubbock Christian University. The Asssociates have raised collectively almost $3 million with all proceeds going to Lubbock Christian University.

Cherry Berries on a Cloud
By: Broadway Luncheon

  • Meringue Bottom Layer:
  • 6 egg whites
  • 1 3/4 c. sugar
  • 1/2 tsp. cream of tartar
  • 1/4 tsp. salt
  • Fruit Filling:
  • 2 (3 oz.) pkgs. cream cheese (or one 8 oz.)
  • 1 c. sugar
  • 1 tsp. vanilla extract
  • 1 c. sour cream
  • 1 c. whipping cream whipped
  • Topping:
  • 2 c. strawberries(or use frozen strawberries and raspberries)
  • 1/2 c. sugar
  • 1 can cherry pie filling

Meringue layer instructions: Grease jelly roll pan. Beat egg whites until stiff and glossy, gradually adding in sugar, cream of tartar and salt. This may take 15 minutes. Spread in pan and bake 60 minutes at 275 degrees. Turn off oven and let cool in oven. Fruit Filling instructions: Combine cream cheese, sugar, and vanilla, then fold in sour cream and whipped cream. (Add a few drops of red food coloring, if desired). Spread filling over baked meringue and refrigerate overnight. Topping instructions: Mix starwberries with sugar and cherry pie filling. Spread over top for third layer. Serves 12 - 15
