Chicken Spaghetti

  • 4 large chicken breasts, deboned and skinless
  • 2 (16 oz.) boxes spaghetti
  • 2 (1 lb.) blocks Velveeta cheese, cubed
  • 1 large sweet onion, diced
  • 1 large green pepper, diced
  • 3/4 stick butter
  • 1 can Rotel tomatoes

Boil chicken in a large pot of water until tender. Remove chicken from broth and return the broth to a boil. Add spaghetti and cook according to directions on the box. Drain, reserving 2 to 3 cups of broth. Put cooked spaghetti back in pot and add cubed cheese. Stir to melt cheese. Can add a little broth to help melt cheese faster. Saute' onion and pepper in butter until tender. Dice chicken. Add Rotel tomatoes, chicken, onions and peppers to spaghetti-cheese mixture. Add just enough broth to mix well. Divide between two greased 3 qt. casserole dishes. Cover and bake at 350 degrees until bubbly.
