Chateaugay Cheese Soup
By: Louella Clark - 1/4 c chopped onion
- 1/2 c grated carrot
- 1/2c green pepper, chopped finely
- 1/4 c butter
- 6T flour
- 1 10.5 oz can chicken broth
- 3 1/2 c water
- 3 full cups grated McCadam Sharp Cheddar Cheese
- 2 c milk
Brown onions, carrots, and green peppers in butter for 10 minutes over low heat. Remove from heat and stir in flour. Return to heat and cook stirring for one more minute. Add chicken broth and water. Bring to a boil and gradually add grated cheese so cheese melts completely. When cheese is melted, stir in milk. Do not boil. Serve steaming hot. Serves 8-10 and is delicious with toasted croutons. |
