Favorite Recipe
New England Clam Chowder
By: Family Member - 2-6 oz cans clams, minced or chopped
- 1 c. onion, diced
- 1 c. celery, diced
- 2 c. (or more) potatoes, sliced
- 1 1/2 t. salt
- 1/2 t sugar
- 1 T. wine vinegar
- peper to taste
Drain clams and pour juice over vegetables in saucepan. Add water to barely cover. Simmer over medium heat, covered until tender. Prepare the white sauce below. White Sauce: 3/4 c. butter 3/4 c. flour 1 quart, half and half cream Mix all three ingredients to make a white sauce and add to undrained vegetables and clams. Sample and add more salt and pepper to taste. Makes 8 servings. |
