Favorite Recipe
Hot Chicken Salad
By: Titus Home Favorite - 6 c. cooked, diced chicken
- 4 eggs, boiled and chopped
- 1 jar diced pimentos
- 1 1/2 c. chopped celery
- 1 1/2 c. chopped onion
- 1 caniter Pringles (plain, light)
- 1 small bag sliced almonds
- 2 c. shredded cheddar cheese
- 2 c. shredded mozzarella cheese
- 1 can cream of chicken soup
- 1 can cream of celery soup
- 1 1/2 c. mayonnaise
Mix together soups and mayo; set aside. In very large bowl, mix together chicken, eggs, pimentos, celery, onions, half of the almonds, half of the chips (crushed) and half of both cheeses. Add soup mixture and stir thoroughly. Transfer into large baking dish. Bake at 350 degrees for approximately 30 minutes or until completely heated. Top with the remaining almonds, crushed chips and cheese and continue heating for 10 minutes more until cheese is melted. Serve warm. |
